Ingredients

For the Wings:

Zest of 1 lemon

2 tsp. kosher salt

1 tsp. smoked paprika

1 tsp. garlic powder

1 tsp. onion powder

1 tsp. dried thyme

1/4 tsp. cayenne

2 lb. chicken wings

Vegetable oil, for grill

For the Sauce:

1/2 c. mayonnaise

Juice of 1/2 lemon

1 tbsp. Dijon mustard

2 tsp. horseradish

2 tsp. freshly chopped chives

1 tsp. hot sauce

Directions

Step 1: Make wings: In a medium bowl, whisk together lemon zest, salt, paprika, garlic powder, onion powder, thyme, and cayenne. Pat chicken wings dry and place in a large bowl. Add spice mixture and toss to coat.

Step 2: Heat grill or grill pan to medium heat. Oil grill grates with vegetable oil. Add wings and cook, stirring occasionally, until skin is crisp and meat is cooked through, 15 to 20 minutes.

Step 3: Meanwhile, make sauce: In a medium bowl, whisk together mayo, lemon juice, mustard, horseradish, chives, and hot sauce.

Step 4: Serve wings hot with dipping sauce.

We can, however, share this. Vice President for Business Development Pat Hayes has agreed to provide the secret recipe for his barbecue sauce, perfected over years of all-weather backyard grilling in the Chicago suburbs.  The secret to winter barbecuing in Chicago? Not minding.

“I’ve done ribs for the Super Bowl when it was -10 degrees,” he says. The other secret to Chicago winter barbecuing? Stay inside.

“Angle the grill so you can read the temperature from the window,” Hayes says.

Ingredients

1 and ½ cups ketchup

3 tbsp. apple cider vinegar

2 tbsp. Worcestershire sauce

¾ cup brown sugar

1 tsp. paprika

¼ tsp. cayenne pepper

1 tsp. garlic powder

2 tsp. onion powder

1 tsp. seasoning salt

2 tsp. mustard

Water, as needed. (Optional)

Directions

Whisk together all of the ingredients in a medium saucepan over medium heat. Allow sauce to bubble and then reduce the heat and let sauce simmer for 10 minutes to thicken. Apply liberally to ribs, chicken, pork or anything that can be eaten.
